James grew up in Alabama watching his grandmother rule the kitchen with an iron whisk and one firm rule: no boys allowed. Naturally, he snuck in anyway — and taught himself to bake her legendary mile-high buttermilk biscuits better than she did. That quiet rebellion became his superpower.

Today, in his Las Vegas bakery, James channels the same fearless creativity. He’ll spike a cake with just enough bourbon to deepen the flavor (the alcohol bakes out, the soul stays in), hide an entire cake inside a cheesecake, or turn a humble pineapple upside-down into a piña colada pound cake that stops people mid-bite.

You’ll taste the South in every layer — sweet potato pie kissed with lavender, fruit tarts that taste like Sunday supper — but nothing here plays by the rules.
